Un-Vail-ing Some Fine Dining
Not only is Vail, Colorado, enjoying a thorough dumping of new snowfall, the renowned mountain resort is also going to be on the receving end of two delectable new restaurants. Plumpjack Group, the Northern California hospitality company heralded for their wineries, boutique hotels, bars and restaurants, is introducing Vail Village’s first new-build restaurant to open in eight years, Pendulum. Slated to open this December of 2016, Pendulum will be swinging in the historical Gorsuch building, best known as Vail Village’s iconic clock tower.
Additionally, a second restaurant called White Bison, a local favorite situated on Gore Creek, will be added to the group’s portfolio as well. “We are thrilled to join the Vail Valley community with two dynamic dining destinations to serve as gathering spots for locals and visitors alike,” says President & Partner, Hilary Newsom. “We want to embrace the warm culture and mountain ethos that Vail is known for, and have drawn upon Colorado’s culinary talent to help us execute this vision.”
PlumpJack Group has developed the concepts for both properties through enlisting local luminary Jake Burkhardt, formerly of Aspen Kitchen, to oversee and execute all things culinary as Executive Chef. Seasoned bar veterans Jacques Bezuidenhout and Ken Luciano, the duo behind celebrated San Francisco cocktail bars Wildhawk, Forgery and VERSO and dozens of Kimpton Property bar programs, will curate both cocktail programs.
